Please don't judge this meal by it's picture, this is a very hard soup to make look appetizing! Ha!
Just trust me when I say it was soooo good!!
Turn on the sauté feature on Instant Pot and add:
About 1 Tbsp of oil
A small onion cut up
Diced carrots (equivalent to two carrots)
Diced Ham (I just buy the prepackaged. It's probably about 1-2 cups..)
Let that cook for several minutes and then add:
2 cups of dried split peas
About 40oz of veggie broth (the more you add the thinner it will be, but this soup gets really thick!)
1/4 tsp salt
1/2 tsp garlic powder
Mix all together and close lid. Pressure cook for 17 minutes and quick release.
Whenever I make soup, I always make this bread to go with it because it is so easy and so yummy with any soup.
Dice up 2 - 4 Tbsp of butter and add to pie pan. Place pan in 400 degree oven. While the butter is melting in the pan, in a bowl add:
2 cups flour
1 Tbsp baking powder
1 tsp salt
Mix. Then stir in 1 1/2 cups milk. Pour batter on top of melted butter and bake for 15 - 20 minutes.
This soup is not very child-friendly because it's green and looks weird. Our girls wouldn't touch it for a while. Finally we got Eleanor to eat it by feeding it to her and she did like it. Maylee only liked the ham.
Since Dalton still is not feeling well and I didn't even want to try to feed him this meal (He hates soup) I went ahead and made him a pita bread pizza.
