This was a wonderful meal that left us all feeling completely satisfied without that woah-I-just-ate-way-too-much heavy feeling. It was a great meal!
To make it, I put some frozen chicken tenders in a frying pan along with a little water, garlic, onion (I just used powder), and greek seasoning. I let that sit until it was golden brown on the bottom and then flipped and seasoned a little more.
I took this pack of greek pita bread and (in the bag) microwaved it in 10 second increments until it was nice and warm. Then, we spread it with hummus and topped with lettuce, tomato, and finally the chicken. For the children, we gave them pita bread with chicken and everything else on the side. We also gave them french dressing (Ella's favorite) and ranch to dip their chicken in. I don't think my children are unique in the fact that they like their meals "deconstructed" as we call it. They really enjoyed it and Maylee ended up putting everything on her pita bread and eating half of it! It was great!
