We have breakfast for dinner every Saturday!
This week we had waffles and buttermilk syrup.
For the waffles:
With an electric mixer, beat 2 egg whites until stiff. Set aside.
Put the 2 egg yokes in a large bowl and whisk. To this add 2 1/4 cups of buttermilk (I don't ever have buttermilk so all I do is measure out the milk and add about 1 teaspoon of vinegar and let sit for a couple of minutes.) and 1/2 cup oil. Whisk together. Add 1 3/4 cups of flour, 2 teaspoons of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt. Mix together until the big lumps are gone. Next, fold in the egg whites.
For the buttermilk syrup (aka the best syrup in the world):
In a large saucepan add 1 stick of butter, 1 cup of sugar, and 3/4 cup of buttermilk. Bring to a boil. Once it begins to boil, let it boil for 1 minute.
Remove from heat and add 1/2 teaspoon of baking soda and 1 teaspoon of vanilla. Whisk.
We served the waffles with buttermilk syrup, raspberries, whipped cream, and tater tots. We also had our yummy citrus drink. It was to die for!
