Honey-lime Enchiladas

These are the best enchiladas. So so good! I put some frozen chicken tenders in a greased pan and seasoned with my seasoned salt (garlic powder, onion powder, paprika, salt, and pepper). As it cooked I began to shred it. It cooked so fast! While it cooked, I put 6 Tablespoons of honey, 5 Tablespoons of lime juice, 1 Tablespoon of oil, 1 Tablespoon of chili powder, and 1/4 teaspoon of garlic powder into a bowl and mixed until combined. Once the chicken was done cooking, I mixed it in with the marinade. You can let this sit overnight, but I'm not the best at remembering that sort of thing, so I don't ever let it marinade and it still tastes wonderful! I put about a 1/4 cup of green enchilada sauce in a 9x13 pan and coat evenly. Then, I begin filling up tortillas with the chicken mixture. Waffles and Buttermilk Syrup

We have breakfast for dinner every Saturday! This week we had waffles and buttermilk syrup. For the waffles: With an electric mixer, beat 2 egg whites until stiff. Set aside. Put the 2 egg yokes in a large bowl and whisk. To this add 2 1/4 cups of buttermilk (I don't ever have buttermilk so all I do is measure out the milk and add about 1 teaspoon of vinegar and let sit for a couple of minutes.) and 1/2 cup oil. Whisk together. Add 1 3/4 cups of flour, 2 teaspoons of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt. Mix together until the big lumps are gone. Next, fold in the egg whites. For the buttermilk syrup (aka the best syrup in the world): In a large saucepan add 1 stick of butter, 1 cup of sugar, and 3/4 cup of buttermilk. Bring to a boil. Instant Pot Yellow Curry

I kind of cheated with this meal and bought this: I put frozen chicken in the instant pot and along with this yellow curry sauce, a can of coconut milk, and some carrots. I pushed the manual button and cooked it for 16 minutes with a quick release. I served it over rice and with a side of fruit. Happy Eating!
